- It's 1 cup of amaranth flour/rajgira flour.
- You need 1/2 cup of ghee.

- Prepare 1-2 tbsp of chopped almonds or nuts of your choice.
Amaranth Flour Pudding step by step
- Heat a saucepan on medium flame. Add milk, water and sugar. Stir and let it boil till sugar dissolves completely. Keep aside..
- Heat ghee in a pan on low medium flame. Once the ghee is hot add rajgira flour and roast it. Stir it continuously..
- Roast the flour for 5-8 minutes or till it gets brown in colour..
- Once flour is roasted nicely. Add in the milk and sugar mixture. Mix well immediately..
- Cover the pan with a lid and let it cook for 1-2 minutes or till all the moisture evaporates and ghee starts to ooze out from the sides..
- Add in the cardamom powder and chopped nuts. Mix well..
- Switch off the flame. Remove the pudding to a serving bowl. Garnish with some more chopped nuts and serve hot..
