- You need 2 tbsp of Vegetable Oil.
- It's 2 lb of beef chuck with bone, meat cut in cubes.
- It's 2 cup of green beans cut in small pieces.
- You need 2 cup of Calabazita (Mexican Zuccini) cut in medium size cubes.
- You need 4 each of fresh whole corn cut in 3 to 4 pieces.
- It's 1 bunch of epazote (mexican herb).
- You need 5 each of Guajillo Chiles(dry chiles).
- It's 5 each of Pasilla Chille (dry chiles).
- Prepare 2 clove of garlic.
- It's 5 each of ancho chile (dry chiles).
- You need 1 each of small onion.
- You need 1/2 cup of Xoconostle (fund in mexican stores is a kind of cactus fruit, a bitt bitter and acidic), peel, remove seeds and sliced.
Mole De Olla step by step
- clean an devein all chiless, and cook them with water untill soft.
- add oil to a deep pot, untill hot then add beef chuck and salt, cook until meat looks caramelized.
- put the cooked chiles and the water they cook on, the onion and the garlic in a blender, blend it. and strain it, so all the chile skin will not end up in the soup.
- once meat is caramelized, add the chile mix from the blender.
- add more water until the meat is completely cover,add some epazote branches, let it cook in low flame for about 20 mins..
- add all vegetables, including xoconostle. if nessesary add water to cover the vegtables, cook for 20 more mins, untill vegetables are completely cooked..
